How has living in regional Victoria shaped your sense of lifestyle, style, and pace?
When we moved from bayside Melbourne to Daylesford, I always wanted to make sure I still wore all my Favorite Australian designers and kept my creative flare as we settled into country life.
I feel my country life has brought has inspired a sense of play and creativity between high fashion, amazing quality knits and beautiful fabrics tied back with the occasional gumboot as my life melds from the farm at Saul to meetings for my social media bossiness and then off to a local river to shoot for stunning brands like Review.
My wardrobe needs to be functional and warm in winter and floaty in summer but always behind my choices is my sense of creativity which comes from my background as a trained actor and performer where m outfit of the day becomes the costume that shapes my day.
My pace is busy and on the go as a mum of two teenagers who do a lot of sport a businesses owner and also a lover of nature and calm.
I need my outfits to carry me from work to the football games and back again, so beautiful, elegant staples here are my go to.
I find nature walks with my children are my way of slowing down and finding solace and calm in the leafy tree gumtree lined pathways we wander, and I have been know to go straight from a meeting in a beautiful dress, thrown on a jkt and gumboots and get straight out into nature.
I am a big believer in the idea that you don’t need to save (that good dress) for a special occasion, every day is the day and if you love it wear it even in the countryside, be the main character in your own whimsical story.
You and your husband actually got married at Sault before owning it—how does that personal connection influence how you run it today?
We did yes.
For 20 years we have run our business together and both bring our own unique talents to our business, I feel it adds heart to what we do as when you visit Sault you will always have contact with one of us, I adore my job and seeing the pure delight in guest faces as they enter the dining room and are greeted by sweeping views of the flowers and farm.
It’s a deep connection to every flower we have planted (I now along with my husband and our dear friend Amanda of Loganberry farm) work each season to grow our flower fields often from seed to seedling and this process connects us to our story and guests are so intrigued to chat with us about the process and all we do on the property.
We put a lot of love and care into training our team and ensuring each facet to our business is nurtured and this can only happen because we literally live and breathe our business.
On the days we are closed we are still here at Sault working on the land, planting and working on the farm.
We work very closely with our amazing team each day to ensure that every facet of Sault is woven together and connected to the story of our regional produce to being as sustainable as possible to the authenticity of the vision we had 20 years ago of making Sault a bucket list destination immersive experience.
People crave experiences now more than ever and so that is our mission to ensure each guest that dines with us feels part of the Sault farm to table experience.
At Sault Daylesford, you host hundreds of weddings—what do you think makes an unforgettable guest experience?
I adore weddings they are such an incredible day and one of my Favorite moments is when I am at the barn door with the bride or grooms waiting to cue them in to the music and I look up and they are in that moment of pure excitement and joy and I get to witness this and assist them as they walk thought the big wooden barn doors down the aisle, 20 years in and I still feel incredible grateful to be part of these moment and ensure their day from start to finish is effortless and calm.
I literally wear runners as I run all day to make sure each moment is perfect, right down to making sure the couple head to the flower fields for that perfect sunset photo moment.
I feel the hands-on touch we offer at Sault makes it an unforgettable experience as they are met warmly at the start of the day and we stay with them right to their Farwell, ensuring all runs smoothly.

What are your go-to wardrobe pieces when you’re moving between the garden, the home, and Sault?
My hunter boots, a beautiful dress, a soft knit and a gorgeous coat.(I always have a Review coat in my car for those surprise chilly afternoons in Daylesford)
Where do you find inspiration—fashion, interiors, food, or the natural environment around you?
I find deep inspiration from my surrounds, I love brining nature into my home, I have grown all my plants in our home to the size of small trees, I wanted to bring the forest inside.
I find my country life leads my interior style with beautiful locally sourced ceramics, rugs and art are staples in my home to keep it feeling calm and peaceful.
Food is the lifeforce of my home and I always have baked goods for my family on the bench, muffins and brownies are a must, ready for hungry teenagers in the afternoon or a winter warm soup on the stove with fresh made bread.
My go to lately is bone broth and match as I love how both are so good for my health and I am honestly seeing my skin glow, at 50 years on I love leaning into natural choices to nourish my body and my family.
For fashion I find great inspiration in the seasons I love adding a pop of colour to my wardrobe when the countryside has gone to sleep and changed to all its rich grassy greens and browns, each season evokes a new colour palette and I find myself dressing in colours that are in the flowers in our fields or soft blue in summer when the Australian summer sky ha that incredible soft aqua tone that allows the candy pink clouds to sit so perfectly on its horizon.
Once of my great loves is the sea and I find great inspiration in the coastlines dotted with wild grasses and the majestic white capped waves against deep velvety blue, these scenes inspire soft floaty dresses, chunky knits of an evening and beautiful basics to wear barefoot on the sand.
I love the whimsy and feminine energy I feel living in the country it always inspires; I also find a lot of inspiration in other lovely Instagram accounts many in the UK with castles and farms and flowers where the fashion adds drama or beauty to a scene in nature.
I try to lean into this with my own account, by telling the story or the energy of a brand and taking it into nature where it can come to life on the landscape.
